a sweet treat for my housemate's birthday last weekend with a specific request for something with white chocolate. probably best suited to andy murray's celebrations of wimbledon, i thought i'd try my hand at strawberries and cream inspired cupcakes with white chocolate buttercream :)
♥ 130g self raising flour
♥ two eggs
♥ 130g unsalted butter, softened
♥ 130g caster sugar
♥ a dash of vanilla extract
♥ twelve cake cases
♥ 200g icing sugar
♥ 200g unsalted butter, softened
♥ 100g good quality white chocolate
♥ twelve of the best strawberries in the punnet
preheat the oven to 180 degrees. begin by making classic vanilla cupcakes by creaming together the butter and sugar in a bowl. you then add in the eggs and lastly the flour and vanilla extract until fully incorporated.
spoon carefully into your cake cases and bake for 15-20 minutes, turning the tray half way through :) this is my way of making cupcakes but totally do what works for you!
you then make the buttercream by whizzing together the icing sugar and softened cubes of butter in a blender. meanwhile, melt the white chocolate in a microwave for 10-20 seconds. i used green & black's organic white chocolate - love the stuff!
you then pour into the buttercream mix and blend until combined.
when your cupcakes have completely cooled, add lashing of the white chocolate buttercream to the top and finish with a strawberry. you can store the buttercream in the fridge for a few hours too until needed - in fact it often makes it easier to use.
lay out on a pretty table cloth and enjoy! :)
