mac 'n' four cheese.


what could be better than a bowl of pasta, covered in cheese and baked until crispy? perhaps a bowl of pasta, covered in four types of cheese and baked until crispy. gooey, oozing four cheese sauce. if you're on a diet for the office christmas party, look away now, this will definitely break the calorie budget. 


shopping list. 
(serves two)
♥ 150g macaroni pasta 
♥ half a white onion, chopped
♥ one clove of garlic, crushed and chopped
♥ 30g butter
♥ 400ml milk
♥ 30g plain flour
♥ 1 teaspoon mustard powder
♥ 200g of your favourite four cheeses grated or crumbled; here i used mozzarella, saint agur, red leicester and cheddar. keep some aside for topping
♥ salt and pepper
♥ breadcrumbs - which can be made by blitzing up some toast in a blender



step one. boil the pasta in a saucepan of salted water for 10-12 minutes.


step two. simultaneously soften the chopped onion and garlic on a very low heat for 5-10 minutes. add together and set aside.

preheat the oven to 180 degrees c.


step three. make the cheese sauce by melting the butter on a low heat in a saucepan. add in the flour and stir together with a wooden spoon.

step four. pour in the milk bit by bit and allow to thicken. keep stirring for 7-8 minutes until it forms a thick and silky sauce. 


step five. keeping on a low heat, add in the cheese until melted. add in the mustard powder and season with salt and pepper to taste.


step six. stir the cheese sauce through the pasta. goooooooooeylicious!


step seven. pour into your dishes of choice. i of course used my new (ish) mini casserole dishes as seen in my homemade beef stew and soy sauce fisherman's pie.


step eight. scatter with breadcrumbs, a twist of black pepper and sprinkle of cheese. on this occasion i used grated parmesan so perhaps this is actually four and a half cheese macaroni?


step nine. bake for 30 minutes until golden. 


dig in!
