a cheeky little chocolate mousse that isn't as naughty as it looks. with ingredients such as low fat quark and fresh avocado, go straight to the top of santa's nice list with a chocolate dessert that even gives you one of your five a day. i know, right? this one has added christmas spices, a crunch of flaked almonds and scattering of cranberries for bonus festive points.
♥ ripe and ready avocado, stone and skin removed
♥ 120g lake district dairy vanilla quark
♥ 50g dark chocolate
♥ 1 tsp runny honey
♥ 2 tsp mixed spice
♥ 1 tsp ground cinnamon
♥ a handful of toasted flaked almonds
♥ a scattering of dried cranberries
equipment: hand whisk
step one. prepare your melted dark chocolate on a very low heat and set aside. keep a square free if you'd like to grate some on top.
step two. scoop the flesh from the avocado and whisk up with a hand blender. when smooth, add in the melted chocolate and continue to whisk until light and fluffy.
step three. add in half the vanilla quark, the honey and spices. give a last whisk for luck.
step four. distribute into your chosen bowls or glasses. these are actually vintage glasses passed down through our family - i only just learn that they are around 70 years old - wow!
step five. dollop the remaining vanilla quark on top, followed by grated chocolate, flaked almonds and the cranberries.
go on... see if you can trick your family and friends this christmas into accidentally eating something healthy. i had to include this picture of just how creeeeeamy it is!
plus with 29 calories and 0.1g fat in 30g of lake district dairy vanilla quark, 120 calories in 25g dark chocolate around 160 calories (but good ones!) in the average avocado, this dessert tots up at little over the 200 mark for a pretty large portion.
