peppered mackerel spiralized salad.

There's no doubt that spiralizer recipes are huge these days. Courgette, cucumber and carrot - if it'll spiralize, it's probably been made into some form of gluten free zoodles, courghetti or vegetable ribbons. It's a great way to get that extra veg in a dish as well as switch out carbs for colour in dishes. Here I've combined cucumber, beetroot and pepper mackerel with my old favourite sesame seeds and soy sauce to create a simple Asian inspired spiralizer recipe.

Shopping list.
(Serves one)
♥ One cucumber
♥ One cooked beetroot
♥ Two spring onions, sliced
♥ 1 tbsp soy sauce
♥ 2 tsp sesame seeds
♥ Peppered mackerel fillet
♥ Handful of coriander

I was recently sent the Gefu Spiralfix Spiral Slicer from Steamer Trading Cookshop for review, and I can't actually believe how fantastic it is. I've had the pencil sharpener style spiralizer for a year or so now, and it's great for slim veg like carrots and courgette. However this new hand turner style which keeps the vegetable in place totally opens up my choices. Plus since you don't have to actually touch the veg - I had to experiment with beetroot!

With the spiral slicer, you can opt for ribbons or three gradually smaller sizes of noodles. I mixed it up with cucumber ribbons and beetroot noodles.

I then added the spring onion, coriander, sesame seeds and a dash of soy sauce before laying on my peppered mackerel. So simple and delicious!

What are your favourite spiralizer recipes? Have you ever tried the hand turning style or have any top tips? Next experiment - sweet potato!

Note: I was sent a complimentary spiralizer for review. All words, opinions and photographs are my own.
