Carrot Cake Pops Recipe

The second sweet instalment in my collaboration with Betty Crocker. Their latest campaign #ICAKEYOU is all about baking for friends and family whether it be a special occasion or just because. Even if you're not the most confident of bakers, it's more about using their mixes to create something to show you care. I've taken their classic carrot cake mix as a baseto whip up some super easy carrot cake pops. Topped with their indulgent cream cheese frosting and some honey glazed walnuts; meet a mini carrot cake treat on a stick! I made these for a girly night in with a few of my old school friends; one brought the wine, another made dinner and I provided the cake!

Shopping list.
♥ Betty Crocker Carrot Cake Mix
Betty Crocker Cream Cheese Style Icing
♥ 50g crushed walnuts
♥ 1 tsp runny honey
♥ 50g milk chocolate
♥ Cake pop sticks

Step one. Make the country carrot cake sponge according to packet instructions. Don't worry too much about tin size or if it looks good, as you only need the sponge crumbs.

Step two. Meanwhile make the candied walnuts by toasted them with the honey in a saucepan on a low heat. After 5 minutes, take off the heat and allow to cool on a non stick paper or surface.

Step three. When the sponge is cool, crumble like breadcrumbs and add a large tablespoon of cream cheese mix. Form into walnut sized balls.

Step four. Melt the chocolate, dip in the cake pop stick and push into the cake ball. This helps to keep the carrot cake ball on the stick. Allow to set.

Step five. Decorate the carrot cake pops with cream cheese icing and a scattering of walnut pieces. Ta da!

  3. Oh these are adorable! I've never tried making cake pops, they've always seemed like too much effort, but using a boxed cake mix is a great way to make them more manageable :)
