coconut and lemon snowball macarons


Inspired by the classic snowball cocktail, these macarons are filled with a zesty lemon buttercream and topped with a sprinkle of coconut. The coconut is just for the snowball effect really, and since lemon and coconut are a taste combination made in heaven. Follow my super easy homemade macaron guide (and some of tips and tricks on my blog too) to rustle up the perfect macaron!



Shopping list.
(Make 12 medium or 24 small macarons)
♥ Two egg whites, at room temperature
♥ 75g caster sugar
♥ 90g icing sugar, sieved
♥ 75g almonds, sieved until fine with lumps discarded

For the lemon buttercream and decoration
♥ 50g unsalted butter
♥ 200g icing sugar
♥ The zest and juice of a fresh lemon
♥ Desiccated coconut

Step one. Make your macaron shells using my easy step-by-step macaron guide below. 


Step two. Create your buttercream by combining all of the ingredients except for the coconut. Keep a tiny few drops of lemon juice back. Set aside the buttercream. until your macarons are baked and cooled.

Step three. When the macarons are baked and cooled, pipe on one side of the shell.

Step four. Complete your decoration by creating a mix of one part lemon juice, three parts water. Use a tiny dab on each macaron (not too much as you don't want the macaron wet) and then scatter the coconut to allow it to stick.
