A delicious warm vegetarian salad recipe that embraces sweet, honey roast cauliflower with creamy and salty goat's cheese. Toss together with roasted cherry tomatoes and wilted spinach before scattering with nutty almonds. A simple midweek meal that goes towards your daily five!
♥ One small cauliflower, roughly cut into small florets
♥ 1 tbsp honey
♥ Olive oil
♥ 50g cherry tomatoes, halved
♥ 100g goat's cheese, roughly chopped
♥ 100 baby spinach
♥ 30g almonds
♥ Salt and pepper to taste
Step one. Lay your cauliflower on a baking tray and drizzle with honey, olive oil, salt and pepper. Roast for 25-30 minutes on around 180 degrees c. Ten minutes in, add your tomatoes and roast together. Ten minutes before the end, add the almonds and again continue to roast.
Step two. Meanwhile wilt your spinach in a little boiling water and grill your slices of goat's cheese.
Step three. Bring together the roasted cauliflower, tomatoes and spinach and scatter with the almonds. Add extra salt and pepper to taste!
