Sometimes the simplest of recipes are the tastiest, aren’t they? No fuss, fresh flavours and a variety of colours and textures are what I look for in a midweek meal. Comfort and convenience is key, but I like to keep it light and fresh too. (However much I love pasta). That’s where The Saucy Fish Co. offerings come in. They’re perfect for adding to healthy veg or stirring through a recipe for a delish balanced dish.

For this recipe, featuring a handy video, I’ve put together the roasted lemon and herb salmon with a zesty but creamy sauce, vibrant grilled tomatoes and a squeeze of lemon. I also used the harmonizing Sicilian lemon with dill mayonnaise to give extra flavour to the sauce. An Italian inspired dish that doesn’t need the Italian chef skills – this salmon recipe can be rustled up in less than twenty minutes. What’s your midweek meal hack?

Shopping list.
♥120g linguine
♥ Fresh chives
♥ 100g vine tomatoes
♥ One lemon
♥ 2 tbsp crème fraîche The Saucy Fish Co. Lemon & Herb Salmon
♥ Fresh basil
♥ Black pepper

Step one. Boil a kettle and cook your linguine for 10-12 minutes.

Step two. Slice your tomatoes. Season and drizzle with olive oil.

Step three. Grill the tomatoes on a medium heat for 5-10 minutes.

Step four. Meanwhile, chop your chives and prepare your lemon…

Step five. When ready, drain your pasta and stir though the ingredients.
