Pumpkin and almond muffins

An autumnal bake to brighten up your weekend. Spiked with warming spices and topped with flaked almonds, this basic pumpkin sponge recipe is the perfect base for some autumnal muffins. If you're wondering how to create a simple sponge mix with pumpkin puree you've come to the right place. This recipe creates the perfect base for seasonal bakes galore - such as my super easy pumpkin spiced baked doughnuts with maple glaze. Can you tell it's my fave season yet?

Shopping list. 
(Makes twelve pumpkin muffins)
♥ 200g self raising flour

♥ 150g caster sugar

♥ 70g dark brown sugar
♥ 1 tsp baking powder 
♥ 2 tsp cinnamon
♥ 1 tsp nutmeg
♥ 1 tsp ginger
♥ 100g butter, melted and cooled down slightly
♥ Three free range eggs
♥ 400g tin of pumpkin puree 
♥ 50g flaked almonds

Preheat the oven to 180 degrees c. Add the cupcake cases to a tray.

Step one. Mix together the flour, baking powder, sugar and spices in one bowl.

Step two. Mix together the butter, pumpkin and eggs. Combine with the dry ingredients and 2/3 of the almonds.


Step three. Pour evenly into the cases and scatter with the remaining almonds. Bake for 25-30 minutes until cooked through and springy to the touch. All to cool ...then devour.
