turkey meatball bake (slimming world friendly).


A tasty (and super easy) Slimming World friendly meal featuring lean turkey meatballs. I don't follow SW myself, but after having friends and family follow it I've often used their website for healthy recipe inspiration. Turkey is even leaner than chicken so makes for a great meatball alternative. Though if you're veggie the Quorn ones are delicious too. Since this is a tomato based sauce featuring syn free pasta and vegetable speed foods, I can imagine this being rather low on the syn count. I couldn't resist a cheeky sprinkle of cheese, mind.


Shopping list.
♥ 500g turkey mince
♥ One free range egg
♥ 2 tsp mixed Italian herbs
♥ 120g pasta shells
♥ One white onion, peeled and sliced
♥ One garlic clove, peeled and crushed
♥ 400g tin chopped tomatoes
♥ One aubergine, chopped
♥ 100g cherry tomatoes, sliced
♥ 200g baby spinach
♥ A sprinkle of mature cheer, optional use of SW healthy extra
♥ Salt and pepper to season
♥ Fresh basil to serve

Step one. Begin by making your meatballs. Combine the turkey mince, herbs and egg with a little salt and pepper to season. Set aside.

Step two. Cook your pasta according to packet instruction, which is usually 10-12 minutes in boiling water. Set aside.

Preheat your oven to 180 degrees C.

Step three. Grill your meatballs for 10-15 minutes or cook them in a frying pan.

Step four. Cook together your onions garlic with a little spritz of low cal spray. Add the vegetables and chopped tomatoes. Allow the spinach to wilt in the saucepan together with the mix.

Step four. By this point your meatballs, pasta and veg mix should be cooked. Combine in a dish and sprinkle with cheese.


Bake for 15-20 minutes until golden and piping hot. Serve with fresh basil and black pepper.

The prep on this one can take around 30 minutes but then it's great to make ahead. I did this one on a Thursday night so I could pop in the oven on the Friday - yum!
