tofu korma.


A fragrant and warming vegan curry recipe which is super simple too. This dish takes inspiration from the classic korma and adds tofu, baby corn and green beans for a healthy veggie alternative. It’s a mild but comforting sauce which can be adjusted to taste and packed with lots of wholesome vegetables. Serve with piping hot basmati rice and your favourite Indian bread. It’s perfect for make-ahead meal too and can be easily frozen for simple midweek meals.

These paneer and pilau rice fritters make for the perfect Indian inspired starter, snack or even as Asian style tapas. I've teamed up with Veetee rice to great creative in the kitchen, featuring their super convenient rice flavours as the star ingredient. Made from pilau rice, scatterings of paneer and peas, they're so simple to make, easy to adjust spice levels and are vegetarian and gluten free too. I've teamed the crunchy fritters with a cool and zesty lemon, mint and yogurt dip - with the fresh flavours bringing out the warm Indian spices.

having recently been sent some geeta's curry pastes and mango and chilli chutney, it seemed like the perfect time to try out one of my favourite curries. lamb rogan josh! i followed the recipe on the back of the paste whilst adding in some spinach and chobani yoghurt to finish. i just love spinach in curries! :)


so i here i present to you a saag and lamb rogan josh with geeta's curry paste...


king prawn pasanda curry.


a sweet, light and creamy curry with a kick of red chilli. adapted from the bbc good food chicken pasanda recipe, i switched chicken for king prawns as they're easily my favourite meat in a curry. 

i found this recipe whilst looking for yogurt based curries to try out the chobani delivery i'd kinda been sent to trial. they're a great alternative to most regular yogurts as they are complete fat free - yep 0%! - and as well as containing entirely natural ingredients they also have lots of protein to keep you fuller longer.


i'm also quite proud of the spice collection i've been building up - means i actually try a lot more curries from scratch now without thinking "oh i won't make that as i don't have x, y and z in the cupboard..." so how did i make this one?

an inspiring menu of modern indian cuisine with fresh and tasty ingredients, a colourful environment and friendly staff along the way; this urban indian canteen is the perfect mix of authentic indian flavours with a modern influence. 

i would go as far as to say this is one of my favourite restaurants and somewhere i always visit when i'm in nottingham - i have so many pictures on my phone of dishes i've had there over the years! so since i met up with my friend grace there last weekend, i thought it was about time i shared my love of the place.

a full breakfast menu with an indian twist; an unlikely combination. could it work? i ordered a chocolate chai whilst i perused the likes of bacon naan rolls, breakfast lassi, fire toast and akuri which is spicy scrambled eggs. decisions decisions! there are even bloody marys for those who are feeling a little delicate. i'd been to dishoom and experienced their dinner menu before so they had a lot to live up to...


the chocolate chai was, as you'd expect, a mixture of house chai tea and dark chocolate - luxurious and infused with spice. the only thing is i did need caffeine quite badly that morning. request for chai mocha please? :)

so since i couldn't decide i went for bombay omelette and sausage naan roll - hoping the naan would be sort of like a side. it wasn't - so i was pleasantly stuffed by the end! the bombay omelette consisted of "a crazy-paving omelette of chopped tomato, onion, coriander and green chilli served with tomatoes grilled on the vine and fire toast". 

the omelette was delicately seasoned, the tomatoes perfectly grilled and the sauce was like a spicy tomato dip. the fire toast was tasty but a bit too much for me as i'd also ordered the naan! silly emily! though not bad for £5.90 hey?

♥ two tablespoons of korma paste
♥ one red pepper
♥ half a white onion, chopped
♥ 200ml coconut milk
♥ your favourite rice
♥ skewers

♥ 200g block of paneer cheese
♥ 3 tbsp tikka paste
♥ one onion, choppped
♥ 400g chopped tomatoes
♥ tbsp tomato purée
4 tbsp natural yogurt
♥ knob of butter
♥ chopped coriander, to serve


this is based on the bbc good food paneer tikka masala recipe - which i really recommend!
