Happy Lunar New Year - 2025 the Year of the Snake! I love creating Chinese inspired recipes and this one is no different. It actually came about by accident when I only had one salmon fillet and wanted to make it stretch into a noodle dish to use some stir fry veg, mushrooms, coriander and spring onions. To make the salmon work for two meals, I used a large potato to make some delicious Chinese style salmon rostis to go with vegetable noodles. Can you believe one salmon fillet yielded four rostis? A recipe I'll make again and again for sure.

simple tuna puttanesca spaghetti.
An easy midweek meal combining my love of seafood, pasta and olives. The classic puttanesca. With wholemeal spaghetti, a tomato based sauce and a hint of chilli, this slightly salty pasta dish can be speedily made up of food cupboard essentials. It's not exactly the most authentic puttanesca recipe either, but it's my interpretation. Perfect for those days where you fancy a bit of comfort food but "you've got nothing in".

king prawn and vegetable pilaf.
A really simple seafood recipe which is light, healthy and flavoursome. Above all, it's really easy to rustle up. There are lots of interpretations of the pilaf, ranging from Central Asian or Middle Eastern areas, namely Turkish to Persian. It's said that one of the best interpretations of a pilaf is found in the best Emiriti restaurants of Dubai, where saffron, turmeric, cinnamon, thyme and cardamom season the likes of machboos, shakshuka, pilaf and curries, with great recommendations from Square Meal UAE. Al Fanar, Zaroob and Seven Sands sound particularly appealing, serving up the likes of Emirati pancakes, manakeesh flatbreads and lamb machboos, as well a mouthwatering desserts showcasing the traditional flavours of dates, saffron and cardamom.
In simple terms, what defines a pilaf from a Spanish paella or Indian biriyani for me is the use of rice and choice of ingredients. So this cheat recipe uses the likes of warming cardamom, cinnamon, lemon, turmeric and cumin for that distinctive colour and flavour of the Middle East. I've read they sometimes feature saffron too, if you're feeling fancy.

Mixing light, lemony flavours and delicate crab with hearty risotto and a kick of red chilli. Really easy to rustle up from cupboard and freezer essentials, this crab risotto recipe features a few of the range from the Very Lazy lot. With an ethos of fuss free cooking, the likes of chopped red chillies, garlic paste and preserved ginger are just a few of their popular staple ingredients. In this recipe, it's all about the finely chopped red chillies (no sore eyes) and pungent garlic pasta to create this flavoursome (and super simple) seafood risotto dish.

Like lots of timeless dishes, the perfect fish finger sandwich recipe is a rather subjective thing. Mushy peas or not? Tartare sauce, mayonnaise or tomato ketchup? Cod or haddock? Breaded or battered? And speaking of bread, are we talking cobs, baps or a couple of slices of classic white bread? The possibilities are endless. I even noticed the topic came up on Channel 4's Sunday Brunch last weekend, where Simon Rimmer created a delicious looking sarnie indeed.
Although it'll always be a work in progress, this is my take on the ultimate homemade fish finger sandwich (if I say so myself). The best part is that the breaded cod fish fingers are baked, making them a little healthier, and the rustic Actifry chips are Slimming World friendly too.

Happy National Picnic Week! And what a lovely week for it too. With an absolute scorcher this weekend, let's hope this is the official start of Summer now! (Please?) I've teamed up with Wayfair to showcase one of their beautiful picnic baskets with a light and summery mini salmon quiche recipe.
Perfect for picnics, these pocket-sized snacks are delicious on-the-go, as well as alfresco dining in the garden. The buttery tart pastry is filled with lightly cooked salmon and fresh dill to create a bitesize favourite that the family with love.

It's no secret that most of my go-to recipes involve salmon. Such a delicate ingredient that goes well with a variety of cuisines - from salmon tandoori and teriyaki noodles to featuring in pasta and risottos. It's always a winner with me! So, when Norwegian Salmon Council got in touch I couldn't wait to get creative with one of my favourite fish. Their Norwegian Salmon is available at Tesco and other leading supermarkets, and is definitely a popular choice amongst seafood fans. There's nothing quite like a nice fillet of pan fried fish to accompany vibrant vegetables and pulses. Salmon is one of my favourite, and either baked or pan fried with vegetables, grains or noodles is one of my go-to dishes. To try out the new Circulon Ultimum Skillet Pan, sent to me for review, I thought it made perfect sense to try out a nice pan fried salmon recipe. I've teamed the salmon with a medley of quinoa, edamame beans, green lentils, chilli, spring onions and asparagus, which I also charred in the frying pan.

For fresh seafood overlooking Marseille's Vieux Port, La Marinière is a must. Showcasing the likes of moules frites, bouillabaisse and seasonal seafood platters, La Marinière can be found along the Quai des Belges amongst the hustle and bustle of the busy French port. I went along a couple of times during my stay in the South of France, both times enjoying some great quality fish dishes at pretty reasonable prices.

A medley of tuna steak and king prawns in a garlicky, lemon dressing made with good quality olive oil. Lovers of salty dishes will enjoy the addition of black olives and sautéed artichoke hearts, which are tossed through angel hair spaghetti. Obviously any pasta will do, this is a good store cupboard recipe which you can add any fish or seafood on top. I love buying tuna steaks in bulk and freezing for a later date - the ideal way to indulge on a budget. Finish with a sprinkle of red chilli flakes for an extra kick, which I think goes perfectly with lemon and garlic.

A super simple kedgeree recipe featuring salmon instead of the traditional smoked haddock. Introduced to Britain as a breakfast dish during the Victorian era, it's now popular as a brunch, lunch or addition to Champagne breakfast. I've used a loose kedgeree recipe to make a really speedy version that can be eaten at any time of day. It is also a pretty low fat and healthy dish packed with protein, as kedgeree recipes include milk. Enjoy!

A simple summer pasta recipe with a kick. Perfect for seafood lovers, this dish mixes juicy king prawns with sweet peppers, salty samphire, zesty lemon and a tingle of red chilli. Easily adjusted to tastes, you can make this for spice fiends and chilli beginners alike.

A seafood twist on huevos rancheros. This Mexican inspired dish of spice, tomatoes and eggs is usually a breakfast affair. I added salmon to the mix to create a delicious meal idea with a bit of a kick. Serve these runny eggs with extra red chillies and fragrant coriander.

This month I've collaborated with Degustabox to create an inspiring recipe using the products inside. Delving in April's Degustabox, I came across the likes of Green Lady Sparkling Tea, Pimms Cider and mouthwatering sea salt, garlic & rosemary Popchips. These were all perfect for a weekend picnic in the recent sun.
For this king prawn recipe though, I've taken the latest Levi Roots Jerk Cook 'n' Coat Instant Marinade along with Veetee's Wholegrain and Quinoa Rice. This Caribbean inspired recipe takes just moments to rustle up, leaving you with a vibrant and spicy seafood dish to enjoy on sunny evenings. For the marinade, you simply pour over whilst you cook the king prawns. And the rice is microwavable or easy just to warm up on the hob too as you add in the kidney beans. I served alongside a fresh and zesty mango, lime, avocado and coriander salsa. Bright, healthy, colourful and it goes towards three of your five a day. But most of all, mouthwatering!
lobster mac and cheese.
A dreamy recipe perfect for seafood lovers, pasta obsessives and cheese fiends alike. And not just any old seafood either, we're getting fancy on the blog today with some Canadian lobster tails. Fancy food, but at rather average prices.
You see, this month Iceland are celebrating their latest frozen ranges and their value for money, convenience, quality and choice. I've chosen to create a recipe which embraces the choice at Iceland which often leaves you thinking "I didn't expect to find that!" Their Luxury Uncooked Canadian Lobster Tails at £9.99 for 220g are a brilliant example of excellent quality too - they definitely don't taste like they've come from the frozen aisle. So I've put a luxurious twist on the usual mac 'n' cheese to create a rather posh macaroni cheese, with chunks of delicious lobster running throughout. Psst... I won't tell if you don't.
