Cauliflower really is the ingredient of the moment. Gluten free rice, vegan steak and wheat free pizza base - so much more than the classic cauliflower cheese (also delicious). So I thought I'd give the meat free trend a try with this dairy free, vegan friendly take on steak. I was really pleased with the results; a versatile texture with crunchy and crispy edges. I created a Mexican twist on it, since what doesn't go well with salsa, tortillas, chilli and heaps of guacamole.
Shopping list.
♥ One head of cauliflower
♥ 2 tsp smoked paprika
♥ 1 tsp chilli flakes
♥ Salt and pepper to taste
♥ A dash of olive oil
♥ Cherry tomatoes on the vine
♥ Tortillas, guacamole, fresh coriander and salsa to serve

Step one. Remove the leave from the cauliflower steak but keep the stalk intact. Slice into steak-like pieces and use the steak to keep the florets together. Coat in spices, seasoning and a little oil.
Step two. Grill either side for 8-10 minutes until cooked and golden. If you like the tomatoes charred, add those too.
Serve up with your other favourite Mexican style additions! Add extra chilli flakes if you like it hot - or extra lime for that zing.
This is an interesting take on cauliflower. I have never tried it as a "steak", so will have to give this a go.
