Introducing the most interesting potatoes I've ever had the pleasure of cooking with. These lovely looking things are Purple Majesty potatoes from Albert Bartlett. Bursting with nutrients and antioxidants, the naturally purple potatoes are great to bake, mash, boil, roast... or do whatever you like really. I decided to make them in a hasselback potato, which involves slicing finely, drizzling with olive oil and baking. Then topping with delicious Mexican inspired toppings of course!
♥ Four Purple Majesty potatoes
♥ A drizzle of olive oil
♥ Salt and pepper to season
♥ One ripe avocado
♥ 2 tsp red chilli flakes
♥ Half a lime
♥ A small handful of fresh coriander
♥ 2 garlic clove
♥ A handful of cherry tomatoes
♥ 50g sour cream
♥ One red chilli
Step one. Slice along your potatoes, half way down. Drizzle with olive oil and scatter with salt and pepper. Bake on a baking tray for 25-30 minutes.
Step two. Meanwhile, whizz together your avocado, lime, coriander and chilli flake to make the guacamole. Adjust to your tastes and add salt or pepper if required.
Step three. Simply stack your potatoes with the guacamole, pushing the mix into the gaps in the potato. Top with the sour cream, sliced red chillies and scatterings of coriander.
Enjoy as an interesting side dish with a Mexican meal or perhaps on a platter as part of a Mexican night. Yum!
