gluten free lemon drizzle cake.


so with a whole load of lemons and a few half opened packets of ground almonds, i set about finding a new cake recipe to try out. and when life gives you lemons, i guess the most   obvious choice is to make a lemon drizzle cake! as this bbc good food recipe for lemon cake is gluten free... it has a secret special ingredient to bind it and keep it moist... mashed potato! 

shopping list
♥ 200g butter, softened
♥ golden caster sugar
♥ 4 eggs
♥ 175g ground almonds
♥ 250g mashed potatoes
♥ zest 3 lemons
♥ 2 tsp gluten-free baking powder
♥ 4 tbsp granulated sugar
♥ juice 1 lemon

preheat the oven to 180s degrees. blend together the sugar and butter until fluffy. then, gradually add in the eggs.


next add in the no so secret ingredients... mashed potato! trust me don't know it until you've tried it!


then grate in the lemon zest, keeping the lemons for the drizzle later on. 


spoon into a greased cake tin and smooth over the top. 


bake for 45 minutes whilst you make the lemon drizzle by mixing the granulated sugar and the lemon juice together.


when the cake has cooled for at least ten minutes, spoon over the drizzle and let it drip down the sides. i then put in the fridge overnight and took to work the next day. 


whilst taking that final slice picture in my kitchen the next morning in my pjs, my housemate came in asking "emily are you having cake for breakfast?" 

well maybe i tried a littttle bit...

  1. I first heard about this site when a friend sent me a message after trying it themselves. I had been getting a bit bored with the usual platforms in Australia, so I figured I’d try something different. While setting things up, I followed casino broadbeach and found it helpful for getting started. What interested me most was the variety of games without it feeling overwhelming. I played over several evenings, and in the end, I came out slightly ahead. It wasn’t anything huge, but enough to feel satisfied with the experience.
