Easy banana bread recipe

If you haven't made banana bread yet, you've probably seen slices scattered all over your social media. I've no idea how every household has ended up with so many surplus bananas, but when life gives you bananas, I guess you make banana bread. It's a super easy recipe too, where you can use any leftover spread to dot into the mix, as well as any extra nuts to scatter over the top. For this, I made a classic easy banana bread recipe, then using some leftover chocolate spread and some flaked almonds from the back of the cupboard. Adapt fillings and topping as you wish, but always enjoy with your favourite tea or coffee.

Shopping list.

♥ 100g salted butter or unsalted butter with a pinch of salt added to the mix
♥ 150g sugar
♥ Two large eggs, beaten
♥ 200g self raising flour
♥ 1 tsp baking powder
♥ Four small ripe bananas, three mashed and one sliced
♥ A splash of milk
♥ 1 tsp vanilla essence
♥ Chocolate spread, a chopped up chocolate bar or jam
♥ Flaked almonds

Preheat the oven to 160 degrees C and line your dish with baking paper (I genuinely use the one I use for pasta bakes...)

Step one.  Mix the butter and sugar together until creamy.

Step two. Add the eggs, flour and baking powder.

Step three. Lastly mix in the three mashed bananas, vanilla essence and a splash of milk.

Step four. Pour a third of the mix in your lined dish, followed by a few dollops of chocolate spread dotted on top. Repeat until all the mix is in the dish.

Tip: If you have chocolate chips or leftover Easter egg (if that is even possible...) then you can stir them through the mix beforehand.

Step five.  Scatter with the remaining sliced banana and flaked almonds.

Step six. Bake for around 50 minutes to an hour. Once slightly cooled, grab a slice and enjoy warm with a cuppa!

Tip: Cover with foil if the top is starting to burn but the middle isn't cooked. You can test this by inserting a knife and checking if it comes out clean.
