mini salmon tartlets: celebrating national picnic week 2017 with wayfair.

Happy National Picnic Week! And what a lovely week for it too. With an absolute scorcher this weekend, let's hope this is the official start of Summer now! (Please?) I've teamed up with Wayfair to showcase one of their beautiful picnic baskets with a light and summery mini salmon quiche recipe.

Perfect for picnics, these pocket-sized snacks are delicious on-the-go, as well as alfresco dining in the garden. The buttery tart pastry is filled with lightly cooked salmon and fresh dill to create a bitesize favourite that the family with love.

Shopping list.
♥ 250g savoury shortcrust pastry
♥ Two free range eggs, beaten 150ml milk
♥ Two salmon fillets, cooked (pre bought or cooked for 20 minutes)
♥ A handful of fresh dill, finely chopped
♥ Salt and pepper to season

Preheat your oven to 180 degrees C

Step one. Roll out your pastry and cut out circles, fill the cupcake tray with the unbaked tart cases. Add baking parchment, then the beans to blind bake the cases for 10 minutes.

Step two. Meanwhile, beat together your eggs and milk in the measuring jug. Add seasoning and chopped dill.

Step three. Add flakes of the cooked salmon to your tart cases. Fill up the cases with the egg and milk mix. Finish with extra black pepper or dill, if you wish.

Step four. Bake for 20 minutes until golden. Allow to cool before adding to your picnic feast!

What are your favourite picnic recipes? How did you spend your sunny weekend?

The picnic basket itself is absolutely lovely, by the way. Brilliant quality crockery and cutlery, with a strong and sturdy wicker frame and great quality stripy inner. Perfect for four people, the Cheltenham Willow Picnic Hamper is currently in sale at £74.99. So pretty!
