Happy Lunar New Year - 2025 the Year of the Snake! I love creating Chinese inspired recipes and this one is no different. It actually came about by accident when I only had one salmon fillet and wanted to make it stretch into a noodle dish to use some stir fry veg, mushrooms, coriander and spring onions. To make the salmon work for two meals, I used a large potato to make some delicious Chinese style salmon rostis to go with vegetable noodles. Can you believe one salmon fillet yielded four rostis? A recipe I'll make again and again for sure.

baked dill salmon with beetroot risotto.
A tasty and wholesome dish for seafood lovers. Salmon, dill and beetroot go hand in hand, so I thought it was about time I made something with them again. When I have extra time at the weekend I love to slowly stir a risotto, simmering away. So I thought I'd bring these ingredients together in a vibrant risotto, for a recipe that is a great source of protein, iron, energy and also goes towards your five a day.

Although the weather can't make it's mind up, Spring is finally in full swing. And that means one of my favourite ingredients is in season... asparagus. Perfect with seafood and fish, the colourful asparagus adds an extra something to this smoked salmon and ricotta puff pastry tart. It's super quick and easy to make too; you can have it for a light lunch, make ahead for picnics or for dinner with a side salad. Tulips optional.

It's no secret that most of my go-to recipes involve salmon. There's nothing quite like a nice fillet of pan fried fish to accompany vibrant vegetables and pulses. Salmon is one of my favourite, and either baked or pan fried with vegetables, grains or noodles is one of my go-to dishes. To try out the new Circulon Ultimum Skillet Pan, sent to me for review, I thought it made perfect sense to try out a nice pan fried salmon recipe. I've teamed the salmon with a medley of quinoa, edamame beans, green lentils, chilli, spring onions and asparagus, which I also charred in the frying pan.

A super simple kedgeree recipe featuring salmon instead of the traditional smoked haddock. Introduced to Britain as a breakfast dish during the Victorian era, it's now popular as a brunch, lunch or addition to Champagne breakfast. I've used a loose kedgeree recipe to make a really speedy version that can be eaten at any time of day. It is also a pretty low fat and healthy dish packed with protein, as kedgeree recipes include milk. Enjoy!

A seafood twist on huevos rancheros. This Mexican inspired dish of spice, tomatoes and eggs is usually a breakfast affair. I added salmon to the mix to create a delicious meal idea with a bit of a kick. Serve these runny eggs with extra red chillies and fragrant coriander.

I'm a huge, huge seafood fan. Eating at least 4-5 portions of fish a week, I'm always looking for new flavours and recipes for salmon, trout, haddock, tuna and seabass. Mostly I tend to eat salmon, for which I'll buy a whole side, slice up into portions and pop in the freezer. With ice as nature's preservative, I'd like to think this is the most purse and eco friendly way to enjoy fish without wasting food or money. Enter: Big Fish Brand. With heritage dating back almost 100 years ago in the seaside town of Grimsby, I was delighted when I was invited to review their latest products and flavours.

the latest of my pasta adventures involved my love of salmon, attempts at tiny tortellini and a pesto adapted for seafood with a hint of parsley. i love making homemade pasta when i've got a spare weekend afternoon as i find it very therapeutic to make and then of course you have a lovely weekend meal at the end of it.
yo! burger: rice, but not as you know it.
ahhh when i saw that yo! sushi were bringing out a limited edition yo! burger, so many questions went through my head. what flavours are there? would the rice "burger bun" be crunchy or springy? what are the sides like? and most importantly... what filling should i go for? a tough decision between the prawn and salmon, with other delicious sounding flavours including chicken, tofu and tilapia, i went for salmon :)
for £8, you get kimchi salmon on a bed of lettuce, topped with kimchi pickled vegetables and shredded nori served with either nori crackers or soya beans, daikon slaw and misochup. not bad for under 400 calories hey?

i know i claim a lot of my favourite dishes are simple. and i'm probably a tad biased/make them too much. but with this one it really is a "bung it".
simply grill the salmon for 10 mins on a medium heat, checking it flakes away if you break it with a fork. then toss it with sliced avocado and rocket. or whatever your favourite salad leaves are really :) healthy and filling!
diy sushi.

♥ sushi rice, seasoned with a tsp of rice wine vinegar

these handrolls, also known as temaki, are great as a snack, as a starter, shared with friends, or as part of other japanese treats.
for mine i used grilled salmon, with a slice of avocado and a little mayonnaise. i used cooked salmon with just light use of olive oil as i did not want to risk use of fresh sushi-grade salmon on my first attempt and knew regular supermarket salmon could be dangerous raw. i bought the nori from a local chinese supermarket though i am sure there is such thing as a fish based japanese mayonnaise or added sesame seeds for that extra something.
sushi rice can be as simple or as complicated as you want to describe it. to put it into better words, follow this recipe.
handrolls include fillings such as crab sticks, soft shell crab or veggie options.
we also tried making a crispy salmon skin roll, for which we asked for the offcuts at a local fish counter, fried them up in a pan and served in a temaki.
i used a diy video to help me prepare the roll like so.

this is a lovely little meal for those watching their weight but looking for variety and indulgence.
i think people are put off trout. just the name of it makes you picture your old geography teacher in wrinkly tights with a face like she's just eaten a whole lemon. well, if it didn't, it does now.
well, think afresh, for trout is the new salmon.
it has a much lighter delicate flavour which only need be slightly seasoned. what's more, it's about half the price.
a dash of olive oil, perhaps a sprinkle of your favourite mixed herbs, wrapped in foil and grilled on a medium heat for ten minutes is all it needs.
serve with rocket salad, or other peppery leaves such as watercress and spinach. squeeze a little lemon and drizzle with honey and mustard dressing. yum.
