cherry bakewell mince pies.


Christmas? Bakewell tarts? Just two of my favourite things, ever. Super simple to make, these cherry Bakewells switch out classic raspberry jam for spiced mincemeat, before being topped with delicious almond frangipane sponge. If you've stopped by before, you'll know I can't help but turn my favourite recipes into Bakewell tart alternatives, and Christmas is no exception. Decorate with marzipan holly to give that unmistakable glace cherry topping a festive twist. All that's missing is a cup of tea!


Shopping list.
(Makes twelve Bakewell mince pies)
♥ 250g shortcrust pastry, or a ready roll sheet
♥ A small jar of mincemeat
♥ 100g unsalted butter
♥ 100g caster sugar
♥ 100g ground almonds
♥ One medium free range egg
♥ 1 tsp almond extract

To decorate:
♥ Icing sugar, mixed with a little water to make a thick icing
♥ Marzipan
♥ Green food colouring paste (I love Sugarflair Spruce Green for Christmas)
♥ Glace cherries, halved

Equipment; cupcake baking tray, circle cutter, rolling pin, saucepan, holly cutter

Preheat your oven to 180 degrees.

Step one. Roll out your pastry on a floured surface and cut out twelve circles. Line a cupcake baking tin with each case.

Step two. Add a dollop of mincemeat to fill the pastry cases half way.

Step three. Make the filling by melting your butter, before adding the caster sugar, ground almonds and lastly the eggs and almond extract. Top up your cases with the filling.

Step three. Bake for 20-25 minutes until cooked through and golden.

Step four. When cool, decorate with icing, glace cherries and marzipan holly.

  6. These look perfect! Mine would come out like a splodge! I will have to try to make them though because my all time favourite 'cake' is mince pie. I would eat them all year round...luckily you can get my other fav.. cherry bakewell all the time! Would love to combine the both!
