The first I tried was the Pulled Beef Ragu Spaghetti- a pure comfort meal with extra veg and trendy courghetti. I enjoyed the rainbow of colours alongside the rich pulled beef and cheese. For best results you're advised to microwave the meals, something I don't actually have. However I cooked all mine in the oven (usually around 30 minutes) and although it took longer they still turned out great.
These Stuffed Portobello Mushrooms with Goat's Cheese were a real treat. Great quality goat's cheese balanced out by healthy kale and grains.
A whole spectrum of colour and texture! This Rainbow Vegetable Pad Thai was really vibrant and tasty, with lots of flavour and texture from nuts to sprinkle on at the end.
A rich dish with a gourmet feel. The Roast Duck Breast with Blueberries had a tangy sauce packed with natural antioxidants. I loved that there were lots of greens to go with my otherwise naughty roast duck.
A healthy take on the takeaway, this vegetarian dish (marked with the green label) was Paneer & Sweet Potato Kofte Biryani. The paneer was particularly delicious and the kofte were flavoursome with a medium spice. I added the fresh coriander for colour and extra fragrance.
This one has to be my favourite! The Quinoa Fish & Chips was a light and healthy take on the British classic. A superfood crumb, sweet potato chips and plenty of good quality veg made this one a real winner. So tasty too! I love that Everdine don't shy away from more premium vegetables such as asparagus, beetroot and kale, rather than the constant carrots and peas you often get.
This was the King Prawn Miso Ramen. Again lots of colour and great quality seafood. This one was quite wet (as ramens tend to be) and would have benefited from being in a noodle bowl. But then with packaging like that, who wants to do the washing up?
And lastly the Courgette, Feta and Quinoa Cakes. An inspired veggie dish, this one was accompanied by iron rich beetroot, parsnips and sweet potato balls. Yummy and towards your five a day (of course!)
Overall, the meals were packed with flavour, colour and goodness. I was always satisfied without feeling overly full, and felt like I had got some fresh tasting vegetables and complex carbs that made me feel healthy and nourished. I would definitely recommend to someone looking to try out clean eating without the hassle of meal prep or worrying about fresh ingredients going to waste.
