Wedding favour macaron recipe

Whether you're planning a wedding or an invite has dropped through your letterbox, there's no doubt macarons make the perfect homemade present or DIY favour idea. I made these pretty pink and gold macarons for a friends' wedding gift this Spring! So, I thought I'd share the recipe for those looking for little bit of wed-spo (is that a word now?) or maybe even a treat for the hen do.

Shopping list.

(Make 12 medium macarons or 24 mini)
♥ Two egg whites, at room temperature
♥ 75g caster sugar
♥ 90g icing sugar, sieved
♥ 75g almonds, sieved until fine with lumps discarded
♥ Pink food colouring

For the vanilla buttercream filling 
♥ 100g butter, softened 
♥ 200g icing sugar 
♥ 1 tsp vanilla essence 

For the decoration 
♥ Metallic edible paint
♥ Cake decorating tools and brushes

Step one. Make your macarons according to my macaron step by step guide below, using a few drops of pink food colouring.

Step two. When cooled down, decorate as you wish with edible paint and cake decorating tools.

Step three. Allow to dry whilst you whip up the ingredients for the vanilla buttercream. 

Step four. Pipe the buttercream on half of the shells and twist together to make up a full macaron.

Tip: Do this around a day before if they are for wedding favours or a gift, as too early can allow them to go soggy. I often keep the shells in an air-tight, cool cake tin and the buttercream in the fridge ready.

And there you go - pretty pink macarons to wrap up in a box. Complete with ribbon!
