Quick and easy recipes for midweek meals? Looking for healthy inspiration, colourful dishes and those extra veggies? Riverford Organic might be for you. Their latest recipe boxes, which can be ordered as one offs, mixed and matched or as a subscription, all feature great quality organic produce. The particular one they send me to try out was the two meal Quick & Light Vegetarian Box at £29.95. Find out how I got on, with a little giveaway,


As with most boxes, you get everything conveniently weighed out for you. Interesting vegetables, spices and pulses seem to be popular with Riverford. Even as a big foodie this was the first time I'd tried romanesco, or hazelnut dukkah as a combination.




With a two meal box these were the only choices. However they were most definitely inspiring enough to feel like a new challenge. This week for example there are the likes of smoky tofu with garlic greens and lentil dhal with tarka fried onions. In addition, they're designed to take just 30 minutes or less.



True to description, the recipes only took 30 minutes and the ingredients were vibrant and fresh. Even with the pastry recipe, there was an added vegetable element and zesty salad alongside.


In this case the warm roast romanesco salad was a favourite, with brilliant textures met with rich tomato sauce and flavoursome cous cous. The leek and ricotta tart was a generous size which kept in the fridge for an extra few days. Again a tasty combination! I think for nearly £30 it would be a treat now and again for vegetarian inspiration! Have you ever tried a Riverford Organic box?
