3 sandwich recipes to inspire your lunch and brunch.

Classic ham, timeless tuna mayonnaise, beans on toast. All excellent and easy choices, but are you looking for something different come lunch time? I was challenged to create three inspiring sandwich recipes using the delicious Hovis Best of Both, found at Morrisons. A tasty mix of specially white and wholemeal flour, the softy and springy bread is a great source of fibre and Vitamin D, whilst lending itself to both sweet and savoury sandwich recipes. From a posh and chunky fish finger sandwich to a layered up pastrami combination, not forgetting Biscoff French toast, here are a few ideas for some lunchtime variation.

Did you know it's super easy to make your own tartare sauce with minimal ingredients? I create a cheats tartare sauce with mayonnaise, a splash of yellow mustard and chopped gherkins. Some would say that fish finger sandwiches are best on white bread so this Best of Both is perfect for that. Plus as we are now working from home more, there's oven access at lunch. Here I've used haddock goujons for that extra touch of luxury!

New york style deli pastrami sandwiches are the perfect way to switch up your sliced meat sandwich game. This one simply features sliced pastrami, ready to find in supermarkets these days, along with Swiss cheese, mustard, mayonnaise, lettuce and gherkins. There actually are very similar ingredients to the fish finger sandwich here - showing you can make similar ingredients go a long way whilst still livening up your lunch.

Thought you needed brioche to create French toast? Not the case! Whisk two large eggs, 120ml whole milk and a pinch of cinnamon to create your mix. Soak your chosen bread in the mixture before frying with a knob of melted butter on a medium heat. Before adding the top layer, add a dollop of Biscoff, Nutella or your favourite spread before adding the second slice of bread. Top with melted Biscoff, cream and raspberries to finish.

What's your favourite sandwich of all time? Are you more of a sweet or savoury fan? I have to say I was in an avocado and toast rut until I discovered how easy it is to make French toast. Will you be giving it a go?
