egg fried cauliflower rice: veggie bullet review.

Spiralized vegetables, cauliflower rice, nutrient packed sauces; it's true we've fast become a nation of the hidden veg. With all the gadgets and gizmos on the market these days, there are so many ways to embrace this trend and switch out carbs for wholesome vegetables. What, wait, no more spaghetti? Now you can whizz up zoodles, boodles, swoodles and whatever other oodles you had in mind, it's super simple to pack out dishes where pasta might have been before.

Don't get me wrong, I love pasta. But I also love trying out new ways to get my five-a-day in a flash. Working 9-5 and on the blog doesn't leave me much time to be grinding away on a spiralizer, let alone taking a picture for Instagram of the results. Cue stage right; the Veggie Bullet. The latest addition to the NutriFamily, this NutriBullet's snazzy younger brother is a 3-in-1 electric Spiralizer, Shredder and Slicer that promises to make cutting down carbohydrates all that more convenient.

The Veggie Bullet is pretty compact compared to other food processors I've tried, although there are lots of bits and pieces to attach before you begin. It isn't quite a "open the box and go" gadget but after a few minutes inspecting the instructions I had the shredder on and ready. There are two different attachments/lids for the shredder and spiralizer so at first glance they do look quite similar. Now I'm onto my third use, I'm pretty confident with putting it together quickly. Just be careful of the different blades - they look very shiny and sharp!

The assembly out of the way, the sheer speed of the machine definitely makes up for lost time. In less than about ten seconds (honestly) I had shredded half a cauliflower! Just ensure you have a bowl ready, as they will come out of the side. I then carefully flipped over the blade to slice a red pepper up, which was seriously satifying. (Anyone else loathe chopping up peppers?) The bullet also left a bit of the cauliflower rice still within the machine, though once spoon out it was pretty easy to clean. The non slip rubber feet also and locking base system also made me feel safe using it, even with such power and wattage.

All that was needed now was to combine my ingredients for the egg fried cauliflower rice recipe. And here's how I did it...

Shopping list. (Serves two generous portions)
One head of cauliflower, cut into florets
100g Quorn pieces
One red pepper
A few spring onions, sliced
♥A clove of crushed garlic
Red chillies, to your desired heat
Soy sauce (gluten free if needed)
♥ A knob of ginger, finely sliced. Or 1 tsp ginger paste for speed
♥ Lime, plus extra to garnish

Step one. Defrost your soya pieces. I use Quorn chicken style pieces which I simply add to a bowl of boiling water for around five minutes.

Step two. Cook together the cauliflower rice with crushed garlic, spring onion, red peppers, chillies, ginger, lime juice and soy. Cook for around 5-10 minutes on a medium heat. Throw in the soya pieces too and stir until warmed through.

Step three. Crack in an egg and continue to stir for a few minutes until this is cooked through. Serve immediately!

The Veggie Bullet currently retails at £149.99 and can be bought from High Street TV.

Have you ever made cauliflower rice? What would you pair it with? It's also brilliant with chillies, curries and for cous cous as a low carb, gluten-free, grain-free, paleo and vegan alternative.
