These colder days are giving me the urge to bake. And the cosy evenings with blankets and candles are making me want to eat sweet treats with a cuppa or hot chocolate. So the temptation to whip up a fresh batch of cookies, when they only need cupboard essentials and less than 30 minutes is strong. This spiced cookie recipe has a delicious and warming base, with sweet half melted white chocolate against crunchy walnuts. Dreamy!
Shopping list.
♥ 75g unsalted butter, room temperature
♥ 75g caster sugar, plus extra to dust
♥ 75g light brown sugar, plus 10g extra for the pecans
♥ 1 tsp vanilla essence
♥ 1 large free range egg
♥ 175g self raising flour
♥ 2 tsp ground cinnamon
♥ 2 tsp ground ginger
♥ 50g quality white chocolate, roughly chopped
♥ 10-12 walnuts
Preheat your oven to 180 degrees C.
Step one. Beat together the butter, two sugars and vanilla essence until creamed, light and fluffy.
Step two. Add in the egg, spices and self raising flour until combined. Scatter in around 3/4 of the chocolate.
Step three. Spoon equal amounts of the mixture onto a lined baking tray, with around a cm between. The mix should yield around 8-10 cookies.
Step four. Scatter the walnuts evenly amongst the cookies and push into the dough. Sprinkle caster sugar over the walnuts.
Bake for 10-12 minutes until cooked and golden. Allow to harden for 5 minutes before transferring to a wire rack to completely cool.
