raspberry and pistachio baked doughnuts with a white chocolate drizzle.

Fluffy and delicious doughnuts with one of my favourite flavour combinations – pistachio, raspberry and white chocolate. I’ll let you into a secret though, these aren’t really doughnuts of the deep fried kind. Essentially, they are a simple sponge mix in my trusty doughnut baking pan. So easy to make – with satisfyingly pretty results. If you saw my pumpkin spiced doughnut recipe, you’ll know I just love to decorate these little delicacies. So I had to make a summer version right away...

slow cooker pumpkin sponge cake with pumpkin cream.

An inviting Autumnal dessert for the darker days; this slow cooked pumpkin sponge really brings the best of the season together. Autumn is my favourite, so when I was invited to get creative for the Crock-Pot Crocktober Halloween Challenge, I couldn't wait to conjure up a cosy recipe. Made in the versatile and convenient Crock-Pot, the slow cooking of this pumpkin sponge really infuses the cinnamon, nutmeg and ginger spices into this dessert. leaving a moist and buttery texture.

This appliance really is deserving of its place on the kitchen counter. From dinner to dessert, the Crock-Pot Express Multi-Cooker can get to work steaming, roasting and sautéing whilst you get on with other everyday tasks. Although slow cooking lends itself to the colder months, you really get make anything all year round. Scroll down to see how this creation really is pretty much as easy as simply pressing a button.

bakewell tart cheesecake.

In the Midlands we're pretty spoilt for food. With Leicestershire as the home of Melton Mowbray pork pies and Stilton cheese, breweries in Burton-on-Trent and the amazing curry houses in Birmingham and Leicester, there really is so much to choose from.

A particular favourite of mine is the Bakewell tart, or pudding, which hails from the Derbyshire town with the same namesake. The puddings and tarts are a little different in recipe and texture, but they both have that delicious medley of almonds and cherries that I can't get enough of. If you've read my recipes or scrolled through Insta before, you'd know I'm pretty obsessed with any adaptation of my beloved tart. So when Leisure cookers challenged me to make a twist on a classic regional dish at my next dinner party, I knew I had try a Bakewell cheesecake. My mixer and range cooker are my best friends in the kitchen so I couldn't wait to get started.

With Wimbledon 2022 this week, I've put together some strawberries and cream macarons inspired by the popular Summer sweet treat. These macarons are made with a red and white marble effect meringue shell before being finished with a vanilla and strawberry jam buttercream filling.

walnut and white chocolate spiced cookies.

walnut and white chocolate spiced cookies

These colder days are giving me the urge to bake. And the cosy evenings with blankets and candles are making me want to eat sweet treats with a cuppa or hot chocolate. So the temptation to whip up a fresh batch of cookies, when they only need cupboard essentials and less than 30 minutes is strong. This spiced cookie recipe has a delicious and warming base, with sweet half melted white chocolate against crunchy walnuts. Dreamy!

For dinner party success, make the mix ahead and bake at the last minute! Serve with lashings of thick double cream and an extra spike of stem ginger syrup.

white chocolate & pecan cookies.

There's nothing quite like freshly baked cookies, all chewy, warm and ever so slightly crunchy. These white chocolate and pecan cookies are no different. Taking on sugary candied pecans, creamy white chocolate and a hit of sea salt on a classic cookie recipe base, these are a real winner for anyone with a sweet tooth. And they don't take long to make either...

triple chocolate macarons.

Chocolate. Triple chocolate, at that. Could there be anything finer than that first bite into your favourite chocolate bar? Personally, I love a really good milk chocolate or anything with almonds, hazelnuts or pistachios. And so, in teaming up with Expedia and their 2017 calender of foodie experience and events, I was inspired by this month's celebration of all things cocoa at York Chocolate Festival.

This triple chocolate macaron recipe is made up of cocoa infused macaron shells, a Nutella spread filling and a final drizzle of white chocolate. Macarons and chocolate? Yes please!

double chocolate & hazelnut wafer cheesecake.

Chocolate Wafer Cheesecake

Introducing a delicious new product all the way from the Slovakia; the Lusette chocolate wafer. Coming very soon to the UK via Halusky, this indulgent treat comes in the form of Hazelnut, Nougat, Lusette Milk and Lusette Chocolate. The dreamy flavours, which can be enjoyed as a teatime treat or part of a baking recipe, are a whole 50g of chocolatey covered biscuit bar which melts in the mouth with a crunch of wafer.

My favourite was instantly the hazelnut, inspiring me to come up with a recipe with this flavour as the star. This double chocolate no bake cheesecake uses the hazelnut wafers a base, with a luxurious chocolate cream cheese topping and is finished with scatterings of milk, chocolate and hazelnut wafers. Not before a drizzle of milk chocolate, of course. And not an oven in sight either! Chocolate lovers, this one is for you.

peanut m&m brownies.

Brownie recipes

When life gives you peanut M&Ms, make brownies. These chocolatey treats are made from my favourite basic brownie recipe with added yumminess. It uses ground almonds which not only makes them gluten free, but also adds a certain nuttiness to the final flavour. You can add any of your favourite sweets really but I just love peanut M&Ms here - making for tiny treats as you munch your way through the brownie. Gooey on the inside, with a chocolate crust on the outside. As brownies should be, in my opinion.
