Game, set, match! It's that time of year where we use tennis as an excuse to drink overflowing jugs of Pimms, pack up a picnic of posh sandwiches and of course... strawberries and cream. Just me? With Wimbledon 2022 this week, I've put together some strawberries and cream macarons inspired by the popular Summer sweet treat. These macarons are made with a red and white marble effect meringue shell before being finished with a vanilla and strawberry jam buttercream filling.
Shopping list.
(Make 12 medium or 24 mini macarons)
♥ Two egg whites, at room temperature
♥ 75g caster sugar
♥ 90g icing sugar, sieved
♥ 75g almonds, sieved until fine with lumps discarded

♥ Red food colouring gel, I used Sugarflair Scarlet Red
For the strawberry jam and vanilla buttercream
♥ 100g unsalted butter
♥ 200g icing sugar
♥ 2 tsp good quality strawberry jam

♥ 1 tsp vanilla extract
♥ Red or pink food colouring

Began by making macarons according to my step by step macaron recipe guide. However, leave the mixture plain cream and instead add stripes of red food colouring to the inside of the piping bag.
As you pipe, the random marble effect from the piping bag will come through into the shells. Leave to dry as in the recipe before baking for 12-15 minutes.
Make the sweet strawberry jam buttercream by whizzing together the ingredients, preferably with an electric mixer if you have one. Finish by piping onto one side of the shell and twisting together to make a complete macaron. Ta da!
