vegan coconut shortbread with chocolate drizzle.


A tasty treat that happens to be dairy free and egg free too! This melt-in-the-mouth vegan shortbread recipe is scattering with coconuts and baked before being drizzled with heavenly dark chocolate. A naturally vegan sweet recipe which is perfectly bitesize.

inspired by sweet indian dessert flavours of coconut, pistachio and cardamom, this malibu infused chocolate tart is actually vegan and gluten free. i brought it to my friend's house for the sweet course, after a delicious indian banquet of freshly made pakora, tandoori salmon and potato and pea curry. i could eat it all over again. anyway, on to the recipe...

i think i've had a craving for french toast ever since i didn't get to a chance to go to le schmuck in paris earlier this year. the idea of sweet crunchy bread with a hint of spice and a dollop of good quality ice cream sounds like a dessert i would devour in seconds. i just hadn't really considered that i could make it myself. 



enter the new style george foreman, which i was kindly gifted to try out. at first i thought oh yes i've heard you can do all sorts of healthy grilling recipes on these. then i read the recipe book and saw french toast. sorry heathy eating, the naughty side of gastronomy wins this time.

a really quick, tasty and wholesome soup. you simply put in the microwave for five minutes - this steams the vegetables on top and warms the soup underneath. you then remove the little sleeve keeping the veg at the top and it drops in :) 

i just had to post this on my blog because i really recommend it for a lunch to take to work - i thought it was a really great idea for a soup packed with veg which was surprisingly filling! x
