goat's cheese, aubergine & spinach lasagne.
A super cheesy vegetarian lasagne featuring the lovely goat's products from St. Helen's Farm. Goat's cheese lovers will enjoy the combination with roasted aubergine and wilted spinach. Diners who avoid cow dairy will be a fan because - there's none of that here! Layers of roasted vegetables, a creamy goat's cheese sauce and extra cheese on top for good measure make this a weekend treat or make-ahead meal.
chocolate, coconut & cardamom tart: baking with malibu.
inspired by sweet indian dessert flavours of coconut, pistachio and cardamom, this malibu infused chocolate tart is actually vegan and gluten free. i brought it to my friend's house for the sweet course, after a delicious indian banquet of freshly made pakora, tandoori salmon and potato and pea curry. i could eat it all over again. anyway, on to the recipe...
vegan peanut butter shortbread cups.
these little dairy free delights are the vegan answer to reece's peanut butter cups. the vegan millionaire's are layered up with coconut sugar shortbread, almond milk caramel, dark chocolate and hazelnut peanut butter. zero cows were hurt in making this dessert, though i'm afraid many nuts may have suffered.
nakd snacks: the little wholefood wonders.
i was recently sent a few treats to try from the lovely people of natural balance foods; a variety of flavours of their nakd raisins and bars. so they're gluten free, wheat free, dairy free, part of your 5 a day and no added sugar or nasties... stop right there and pass me a multipack of daim bars! only kidding, these little things really did feel like quite a naughty sweet after a meal or as a scrumptious mid morning snack.
