With inspiration from thebar’s non alcoholic mocktail recipes, I’ve put my own spin on their English countryside inspired Orchard Mist to create my very own Orchard Martini. With the original recipe featuring pear and elderflower, I’ve opted for apple juice, elderflower and honey to sweeten up this rather British medley.

Light Summer evenings call for vibrant salads and low carb recipe inspiration. If you’re a regular on my little food blog, you’ll know I have a penchant for getting my five a day. I also lead a mostly pescatarian diet with lots of salmon, trout, haddock and king prawns making up my meals. I really enjoyed creating this #SummerTreats recipe for Rennie, who challenged me to intergrate as many colourful, delicious Summer ingredients as possible into one dish.
For me, tuna steak is a real treat. It’s not something I have often and when I do, it’s an extra indulgence on the purse strings. Packed with Omega 3 and B vitamins, it’s a little healthier than my occasional Bakewell tart too… I teamed up the tuna steak with a rainbow salad of avocado, aubergine, green beans, tenderstem broccoli, edamame beans and red pepper for extra colour, flavour and nutrients. Not forgetting a zesty chilli, lemon and garlic dressing tossed through the salad and drizzled on top to finish!

A super simple dish which makes for a great evening meal. Packed with veggies, delicious pesto salmon and wholemeal spaghetti, this kale pasta dish is three of your five a day. Summer comfort food, if you will.

when i finally got hold of a julienne peeler the other weekend, i couldn't wait to get started on making carb free spaghetti with vegetables. along with some homemade pesto, i tossed together some roasted red peppers and aubergines with some courgette pseudo-pasta to make a pretty healthy midweek meal.
five-a-day vegetable lasagne.
just wanted to share this yummy and healthy (ish) vegetable lasagne i made for my friends at the weekend. one of my friends is a veggie so i decided to plonk as many vegetables as i thought would go together into a pan, add tomato sauce and layer up in a lasagne.
i was pretty pleased with the results and they even went back for seconds... yay! i like to think this would be almost all your five a day in one go. though the cheese probably cancels that out. let me know if you try it! :)
this was also the first thing i've made in my new kitchen. if you follow me on twitter you'll know i've been super busy moving house lately - still got lots of posts to write up even from my old kitchen!
