salmon korma kebabs.

this could be used as a barbecue idea or as part of a meal. for the recipe, which serves two, you will need...

shopping list
♥ two salmon fillets
♥ two tablespoons of korma paste
♥ one red pepper
♥ half a white onion, chopped
♥ 200ml coconut milk
♥ your favourite rice
♥ skewers

begin by slicing the salmon into chunks and tossing in one tablespoon of the korma paste. then thread onto the skewers with peppers inbetween. grill on a medium heat for 10-15 minutes. at the same time, have your choice of rice ready on the boil - in this case i used wholemeal.

whilst the salmon is grilling, make the korma sauce. i let the onions sweat for around 5 minutes in a saucepan on a low heat, then add the other tablespoon of korma sauce. stir on a low heat for another 5 mins, without letting the onions burn. lastly, add the coconut milk and continue stirring until the kebabs are done.

bring together by placing the kebab on the rice, followed by the korma sauce. you could probably do it without the sauce actually but as an experiment i just wanted to make sure the kebabs weren't dry :)

has anyone else made anything similar? would love to see your recipe links or how you get on if you try this one.
