A simple vegetarian recipe made up of a Mexican bean medley, homemade guacamole and Quorn chicken style pieces cooked in fajita spices. I've been making a lot of tortilla and burrito styles dishes lately so thought I'd share this one with you too.
Makes one portion
♥ One very ripe avocado
♥ 20g tomatoes, chopped
♥ Half a red onion, chopped
♥ Two garlic cloves, finely chopped
♥ A three bean medley of your choice
♥ Three tortillas
♥ 60g Quorn chicken style pieces
♥ Fajitaseasoning; can be made from chilli powder, cayenne pepper, paprika and mixed herbs
♥ Sour cream to your taste
♥ Squeeze of fresh lime
Step one. First mash up the avocado, tomatoes, red onion, half the lime and garlic to make a chunky guacamole type mix.
Step two. Cook the Quorn pieces in the spices for around 5-10 minutes on a medium heat with a dash of oil. Lightly mash the mixed beans and slowly warm them up on a low heat.
Step three. When you have the three elements, simple wrap up on a tortilla; i used wheat and white.
Lastly add sour cream and a squeeze of lime and ta da! I've since found out if that if you wrap up the tortilla in foil like a burrito, it's much easier to eat and keeps it warm too. You could always prep all these ingredients and freeze them too - in fact I've got some mixed pepper chilli defrosting ready for tea right now!

Wow! Those fajitas look amazing! I love quorn, but I find it rather dry sometimes. I bet it tastes amazing with the guacamole. I'll definitely steal this recipe to please some meat eaters when they come round for dinner sometime!
