vegetarian and gluten free lasagne.


A hearty but low carb lasagne which is both vegetarian and gluten free. Switching the lasgane sheets for sliced courgette and packing with lots of veggies and quinoa, this was a perfect indulgent Friday night in dish - with a few of your five a day too. And cheese, lots of cheese.

Shopping list.
♥ One aubergine, chopped
♥ One white onion, or a handful of shallots, chopped
♥ 2 garlic cloves, crushed or finely chopped
♥ Tin of chopped tomatoes
♥ 100g spinach
♥ One red pepper, chopped
♥ 2 sticks of celery
♥ 20g walnuts (can omit for nut free)
♥ 1 tbsp tomato puree
♥ 50g quinoa
♥ Two courgettes
♥ 350ml white lasagne sauce
♥ 30g vegetarian Wensleydale cheese
♥ Mozzarella ball


Step one. Begin by cooking together the garlic, aubergine and onion/shallots with a little oil in a large saucepan. Cook on a low heat together for five minutes.

Step two. Add in the tomatoes, tomato puree, red pepper, walnuts and celery. Add the spinach bit by bit and allow to wilt down. Cook together for 20 minutes on a low heat.

Step three. Meanwhile slice the courgettes into long slithers with a potato peeler. Any excess courgette, chop up and add to the saucepan. Waste not want not and all that!

Step four. Add in the quinoa (and water if needed) to the saucepan mix and continue to cook for a further ten minutes. Season to taste.

Preheat the oven to 180 degrees c.

Step four. To assemble the lasagne (or courgagne?) simply layer up the vegetable mix, lay on the courgette slices, pour over some white sauce and grated cheese. Repeat. On the top layer add sliced mozzarella and black pepper.


Bake for 45 minutes, until golden on top. Serve up with extra cheese and seasoning!

  4. Love the idea of using courgette instead of pasta! I've seen it done with all sorts of veggies but am yet to try it - will add this to my to do list! :)
