Ketel Vodka Bloody Mary Brunch

Is there a finer meal of the day than brunch? Kicking back on a Sunday morning, the scent of rich coffee circulating through the kitchen and a couple of eggs frying in a hot pan. You've got your favourite record on and the comfy armchair is waiting for you to snuggle back and delve into your gooey eggs with an extra twist of black pepper and sea salt. But not before you Instagram it of course.

Salmon Potato Rosti Recipe

This weekend, I created a rather spectacular brunch if I may say so myself. Inspired by the Ketel One bloody mary and brunch recipes from around the world, I created a mouthwatering stack of spring onion and dill potato rosti with oak smoked salmon, topped with a fried egg with a runny yolk. I served it up with an Australian inspired Bloody Mary recipe, which has an extra dash of balsamic, squeeze of lemon and is topped up with pale ale. 

Shopping list.
♥ 200g potatoes
♥ 2 spring onions, chopped finely
♥ 2 tsp dill, plus extra for garnish
♥ 100g smoked salmon
♥ Two free range eggs
♥ Salt and pepper to season
♥ Oil to fry

Equipment; grater, cooking rings, frying pan

Step one. Begin by grating the potato. Using a tea towel, squeeze the moisture out of the grated potato.

Step two. Season the potato and add in the spring onion and dill. Divide the mixture into two.

Step three. Add some oil to your frying pan and fill the cooking rings with potato. Pat down with a spatula or spoon until it is the desired circle shape.

Step four. Fry for three minutes and then remove the ring and fry on the other side.

Tip: You can do this next bit whilst the rosti is cooking on the second side or wait until the pan is totally empty.

Step five. Crack your egg into the cooking ring and fry for 4-5 minutes until the white is cooked but yolk is still runny.

Step six. Assemble with your potato rosti, then strips of smoked salmon and lastly your egg. The gloriously gooey egg. Season to taste and devour.

♥ 50ml Ketel One Vodka
♥ 90ml freshly pressed tomato juice
♥ Pinch of pink sea salt and black pepper
♥ 8 drops of hot sauce
♥ 10ml balsamic vinegar
♥ 10ml lemon juice
♥ 30ml pale ale

Method. Add all ingredients to your glass, fill with ice and stir. Top with 30ml of pale ale and garnish with a wedge of lemon.

  3. I definitely need to try this rosti! Smoked salmon and eggs are my fave, but always get stuck on what to have them with. This is perfect :-)
