No plates, bowls, slates or platters today. And not a chop stick in sight either. In fact, today's recipe can balance on the average spoon. Teaming up with Heinz for the launch of their new Seriously Good Mayonnaise, I was challenged to create a seriously good spoonful. This moreish mouthful l is made up of grilled mushrooms and crispy halloumi before being topped with pesto and chilli infused mayo. A bitesize vegetarian treat that would perfect for party canapés.
Shopping list.
(Makes 8-10 spoonfuls)
♥ A block of halloumi, carefully sliced into squares
♥ 100g button mushrooms, sliced
♥ Heinz Seriously Good Mayonnaise
♥ A spoonful of green pesto
♥ 2 tsp red chilli flakes
♥ Chopped fresh basil to garnish
Step one. Simply grill your halloumi sliced whilst you pan fry the mushroom slices with a little black pepper.
Step two. Mix the pesto and chilli flakes into your mayonnaise to taste.
Step three. Layer up the halloumi, mushrooms and top with a dollop of pesto mayo. Garnish with more chilli flakes and finely chopped basil.
