cranberry & white chocolate cookies.


Another cosy Christmas recipe just waiting to be enjoyed with your afternoon cuppa. Perfect as an edible gifting idea, a festive bake for the tin or treat to take into the office. These cranberry and white chocolate cookies can be really easy mixed up in one bowl too. With Christmassy cranberry combined with a hint of orange zest and chunks of sweet white chocolate, these cookies are a real crowdpleaser with minimum washing up. (Pstt, and they don't take long to make either...)


Shopping list.
♥ 75g unsalted butter, room temperature
♥ 150g caster sugar
♥ 1 tsp vanilla essence
♥ 1 large free range egg
♥ 175g self raising flour
♥ 50g white chocolate, roughly chopped
♥ A handful of dried cranberries

♥ The zest of one orange


Equipment; Non stick baking tray, zester, food mixer


Preheat your oven to 180 degrees c.

Step one. Beat together the butter, sugar and vanilla in a mixer for around 2 minutes.

Step two. Next add in the egg, flour, zest, cranberries and chocolate. Mix for another few minutes until combined.


Step three. Spoon equal amounts of the mixture onto the baking tray, a few cm apart. The mix makes around 7-10 cookies.

Bake for 10-12 minutes until cooked and golden. Allow to harden for a few minutes before transferring to a wire rack to completely cool. Enjoy with a festive tea or even a mulled wine!
