simple tofu stir fry.

first off, this is most definitely a real cheat dish, taking me no more than 5 minutes to throw together. however, i just wanted to share with you how much i really rated the cauldron marinated tofu pieces i recently tried. 

as a quick healthy meal after work i've always heard about how great tofu can be as a meat alternative. what's more, it's packed with protein which by now everyone knows "keeps you fuller for longer" :) so i thought right... let's have a go! after boiling the noodles (none egg noodles for vegan version), i literally just threw it all together with some mange tout and baby corn on a high heat for around 5 minutes. i used a pre made black bean stir fry sauce (blastphemy!) though it was lovely so i'm not ashamed to admit. 

coming in at around 184 calories for half a pack i was quite surprised how this dish could mount up to being quite calorific if you aren't careful. but with 2 of my 5 a day and lots of energy this was a great gym day meal. the tofu was really nicely seasoned and gave a nice chargrilled effect upon pan frying. 

now to try a tofu dish from scratch...
