olive it! chorizo and olive skewers + win a cookery class with omar allibhoy.


I just love tapas. Second to sushi, it's probably one of my favourite meals to share. (Or sometimes, not share). The smoky flavours of paprika, the abundance of olives, fine Spanish meats, crispy calamari, stacks of Manchego cheese and wholesome paella, all washed down with a rich and fruity red.

If you haven't come across them already, the olive it! recipes are fab and totally free. I once made José Pizarro's black olive and chorizo stew, rich with thyme, bay leaves, sherry vinegar and flat leaf parsley. 

I've been invited to experience the cookery course with Omar Allibhoy myself and really can't wait to improve my spanish culinary skills. so i headed to the latest collection myself to see what recent recipes i could try out. Chorizo and olive skewers with a honey mustard dip jumped out at me as an appetiser to enjoy whilst cooking a paella and sipping on wine on a lazy Friday evening.




As you can see, you simply need peppers, chorizo and green olives which you thread onto skewers and grill. The mayonnaise can be made from scratch and then honey and mustard added, or like me you could cheat and just add honey and mustard to mayo. Sorry Omar - was too hungry! 

Honestly though, you need to try this easy peasy recipe. honey, mustard, chorizo and olives are a match made in tapas heaven.
