homemade salmon burgers: easy eating with co op.


a simple summer burger for seafood lovers like myself. this homemade salmon burger patty is made up of steamed salmon, a dash of lemon, a sprinkling of fresh coriander and dill, a handful of spring onions and finely chopped garlic. make a few hours ahead for an easy evening meal or alternative weekend barbecue idea. i enjoyed mine with salt and pepper hand cut chips and a generous portion of coleslaw.

makes two large burgers or four medium.

shopping list

♥ 500g lean turkey mince
♥ a bunch of spring onions
♥ two handfuls of fresh coriander, stalks removed
♥ half a red pepper
♥ ciabatta bread
♥ your favourite salad
♥ mayonnaise, if preferred



this recipe couldn't be easier. or tastier. or healthier.
well, maybe without the mayo.

simply mix together the mince and chopped vegetables and form into patties, then grill or fry off for around 20 minutes, or until browned and cooked through. then take a few coriander leaves and stir through the mayonnaise.

serve with warm bread and salad and ta daaa!

♥ two skinless haddock fillets
♥ four slices of parma ham
♥ 150g handful of asparagus


for the garlic filling
♥ two garlic cloves
♥ a bunch of parsley
♥ a knob of butter

for the chips
♥ two baking potatoes
♥ salt and pepper to season


wrap it up and you're away. cook for 20 minutes on 200 degrees :)
