chorizo baked eggs.


a spanish twist on your usual brunch, these chorizo baked eggs are a mix of the smokey paprika sausage, rich coriander infused tomato and runny egg. based on the bbc good food spicy tomato baked eggs recipe, i added the chorizo and used a mix of whole and blended tomatoes rather than chopped. hope you enjoy...


shopping list.
serves two.
♥ half a chorizo sausage, chopped (around 100g)
♥ 10-15 cherry tomatoes
♥ one red onion, chopped
♥ two garlic cloves, chopped
♥ one red chilli (i used a tsp of lazy chilli)
♥ 1 tsp caster sugar
♥ a bunch of coriander, stalks and leaves chopped separately


begin by softening the red onion, garlic and tomatoes. i blended half the tomatoes and left the other half whole as i love the texture of grilled or baked tomatoes. add in the sugar and coriander stalks and simmer for 8-10 minutes. you can freeze and save this part for future breakkies :) preheat the oven to 180 degrees c.


i then poured the chorizo, tomato mix into a ceramic dish and sprinkled on the coriander leaves - totally up to you and your pots and pans here. you could carefully put the saucepan in the oven if you wish or crack the eggs in the pan and keep on the hob with the lid on for 6-8 minutes. if you want to bake them, it will take 15 minutes in your preheated oven.


just before the eggs are ready, prepare your choice of toast or accompaniments. i just went for crusty granary bread here but you could even buy a loaf to dip in. divine. i seasoned with salt and pepper and added more coriander - love the stuff!


i've been loving me a good weekend breakfast lately. here is another one of late... spinach and smoked salmon with poached egg and spring onion which were actually sushi making leftovers.
