vimto jelly bean macarons.


The latest addition to my macaron recipe collection... featuring a well known British soft drink. These Vimto macarons have been coloured pastel purple before being sandwiched together with sweet Vimto infused buttercream. Established in 1908, Vimto is known for it's unusual fruity flavour made with a medley of grapes, raspberries and blackcurrants.  

A recent member of the Vimto family are their mini jelly beans - the very inspiration behind this recipe. So when I was asked if I wanted to join in the Vimto Jelly Bean Bake Off I knew I had to make macarons!


Shopping list.
(Make 12 medium or 24 mini macarons)
♥ Two egg whites, at room temperature
♥ 75g caster sugar
♥ 90g icing sugar, sieved
♥ 75g almonds, sieved until fine with lumps discarded
♥ Purple or lilac food colouring. I used Dr Oetker Ultra Violet colouring gel

For the Vimto buttercream
♥ 100g unsalted butter
♥ 200g icing sugar
♥ Two teaspoons of Vimto cordial
♥ Purple food colouring


Step one. Make the macaron shells by using my simple macaron step by step illustrated guide

Step two. Whilst the shells cool down, make the Vimto buttercream by whipping together all the ingredients. I did try and ad jelly beans to the buttercream mix at first but it proved difficult to fit them inside and twist together neatly.

Step three. Lastly, simply pipe the filling and twist together to make a full macaron. If you need any extra help, my macaron tips and tricks are hopefully helpful too!

    They look really nice!
    For some reason when I used the French meringue method my macarons kept sinking... couldn't understand why (Any ideas?). I used an Italian meringue method and found that they were a lot easier to work with! Do you have any tips on getting them to have the perfect feet?? Im still struggling a little!

    1. Hi Ben. Thanks for your comment! Perhaps your oven needs to be slightly hotter? As I find they rise like crazy. But not too hot, as then they crack. Sometimes I even start at about 130 and then once I feel confident that the shells are okay I turn it to 150 to try and give them some extra height on the feet. I made these on a warm day so I was scared to go too high - hence them not having much of a "foot" See my Malteser ones for an example :)

  11. A very informative article... That is the same thing that I am trying to find... Here is the information for the Turkish visa for US citizens. The US citizens can get their Turkey visa USA online without going to the embassy, they get their visa on the registered email.
