pad thai with a difference.


a delicious mix of juicy king prawns, a squeeze of lime, a crunch of nuts and a handful of sweet coriander...  flavours which make up the unmistakable elements of a prawn pad thai. however in this version, i've replaced the noodles with faux courgette noodles made in minutes with my julienne peeler. that's right, it's not just spaghetti you can replace with this cheeky little gadget.


once you've julienned the courgette, you simply add to the pad thai ingredients in your wok. for mine, i love to use the biggest cooked kings prawns i can find, chopped spring onions, crumbled peanuts, fresh coriander leaves and stalks, a sprinkle of brown sugar, a splash of fish sauce and lots of fresh lime. by all means, you could add chilli, bean sprouts or whatever you fancy. or in fact, make a totally different noodle dish alltogether.


below is another experiment with red pepper and sesame soy mackerel which also turned out to be very flavoursome and filling :)
