Aero macarons

Another macaron recipe from me! This time it's turn for another timeless chocolate bar to be the star of the show - the mint Aero. With pastel green shells and a chocolate mint buttercream filling, meet the mint Aero macaron! When pondering the sweet counter, I never think to choose them, but this just reminded me all over again why they're such an underrated and classic chocolate choice. And sandwiched in a French macaron? Yes please!

Mint Aero macarons

Shopping list.
(Make 12 medium or 24 mini macarons)
♥ Two egg whites, at room temperature
♥ 75g caster sugar
♥ 90g icing sugar, sieved
♥ 75g almonds, sieved until fine with lumps discarded
♥ Green food colouring or gel.

For the mint Aero buttercream
♥ 100g unsalted butter
♥ 200g icing sugar
♥ 70g mint Aero, melted
♥ 20g cocoa powder 
♥ A dash of milk or water if the mix is too thick

Step one. Make the buttercream ahead by whipping together the ingredients. Use an electric balloon whisk for 10 minutes for extra thick and fluffy buttercream. Set aside in a cool place.


Step two. Make basic macarons using my little illustrated macaron recipe guide. I used Sugarflair Spruce Green to colour the macarons.


Step three. Pipe in the mint Aero buttercream and twist the two shells together to make a complete mint Aero macaron. Yummy!

  1. I'm in awe of your illustrated recipe! I made macarons for the first time last week and most of them went well! They were just plain, but dyed neon blue, with vanilla buttercream. They're tricky bastards but I think the challenge is part of the fun. I'll be subscribing to your blog for sure :)
