i found this mackerel, beetroot and potato salad recipe on the bbc good food website and just wanted to share how it turned out. the element that took the longest was boiling the potatoes - after that it's just a case of throwing the chopped ingredients together with a simple lemon and olive oil dressing.
the smoked mackerel and sweet beetroot worked better than i'd even imagined and the dill and spring onion went brilliantly with both the potatoes and fish. i actually forgot the caraway seeds but will most definitely be trying it out again soon. a tasty and healthy midweek meal - highly recommended!
